- 1 Can Chickpeas, 14.5oz drained and rinsed
- 1 pint Cherry Tomatoes
- 1 Cucumber, peeled, seeds removed and diced
- 1 Yellow Bell Pepper, diced
- 1/4 Red Onion, thinly sliced
- 1/4 cup pitted Kalamata Olives
- 2oz Feta Cheese
Dressing:
- 2 tbsp Olive Oil
- 2 tbsp Red Wine Vinegar
- 1 tsp Garlic Powder
- 1 tsp dried Oregano
- 1/8 tsp Kosher Salt
- 1/8 tsp Ground Black Pepper
Instructions
- To a large bowl, add the chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, Kalamata olives, and feta.
- Drizzle the olive oil and red wine vinegar directly over the veggies. Next, add 1 tsp garlic powder, 1 tsp dried oregano, salt and pepper.
- Toss everything together until well combined and evenly coated with the dressing.
- For maximum flavor, let the salad sit for 10–15 minutes before serving. You can also refrigerate and enjoy within 3 days.
