Description

Fresh, crunchy, colorful, and loaded with Mediterranean flavor! This easy Greek Chickpea Salad combines fiber-rich chickpeas, crisp veggies, Kalamata olives, and creamy feta with a simple Greek-inspired dressing for a delicious no-cook lunch, side dish, or meal prep favorite.


Ingredients

  • 1 Can Chickpeas, 14.5oz drained and rinsed
  • 1 pint Cherry Tomatoes
  • 1 Cucumber, peeled, seeds removed and diced
  • 1 Yellow Bell Pepper, diced
  • 1/4 Red Onion, thinly sliced
  • 1/4 cup pitted Kalamata Olives
  • 2oz Feta Cheese

Dressing:

  • 2 tbsp Olive Oil
  • 2 tbsp Red Wine Vinegar
  • 1 tsp Garlic Powder
  • 1 tsp dried Oregano
  • 1/8 tsp Kosher Salt
  • 1/8 tsp Ground Black Pepper

Instructions

  1. To a large bowl, add the chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, Kalamata olives, and feta.
  2. Drizzle the olive oil and red wine vinegar directly over the veggies. Next, add 1 tsp garlic powder, 1 tsp dried oregano, salt and pepper.
  3. Toss everything together until well combined and evenly coated with the dressing.
  4. For maximum flavor, let the salad sit for 10–15 minutes before serving. You can also refrigerate and enjoy within 3 days.
