- 3/4 cup Pumpkin Puree
- 1 cup Almond, Cashew or Peanut Butter
- 1/4 cup Maple Syrup
- 1 Egg
- 1 tsp Vanilla Extract
- 1 tsp Pumpkin Pie Spice
- 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Kosher Salt
- 1/3 cup Chocolate Chips + 2 tablespoons
Instructions
- Preheat oven to 350° F. Spray an 8×8 baking pan with nonstick spray, set aside.
- To a large bowl add the pumpkin, almond butter, maple syrup, egg, vanilla, pumpkin pie spice, baking powder, baking soda and salt. Stir together with a spatula to fully combine.
- Next, fold in 1/3 cup chocolate chips.
- Pour the batter into your prepared pan and smooth the top so the batter is even. Top with the extra 2 tbsp of chocolate chips.
- Place the pan into the oven and bake for 25 minutes until the blondies are set.
- Allow the blondies to cool on a wire rack for at least 15 minutes before digging in. Enjoy!
Notes
- If your nut butter was kept in the fridge, microwave it for 20-30 seconds to soften it and make mixing much smoother!
